How the Calculation Works
Total Dough = Number of Pizzas x Ball Weight
Flour = Total Dough / (1 + Hydration + Salt + Yeast + Oil + Sugar)
Water = Flour x Hydration, Salt = Flour x Salt%, and so on
Each percentage is expressed as a decimal in the divisor. A Neapolitan dough at 60% hydration, 3% salt, and 0.1% yeast gives a divisor of 1 + 0.60 + 0.03 + 0.001 = 1.631. For four 250-gram balls (1,000 g total dough), the flour is 1,000 / 1.631 = 613 g. The water is 613 x 0.60 = 368 g. The salt is 613 x 0.03 = 18.4 g. The yeast is 613 x 0.001 = 0.6 g. The percentages can add up to more than 100% because each one is relative to the flour alone, not to the total. A recipe with 100% flour, 65% water, and 2.5% salt totals 167.5%. That is normal and expected in baker's math.
